Crispy potatoes mixed with lomo saltado–style onions and tomatoes, topped with two fried eggs, cilantro, and ají verde.

CHIFA SCRAMBLE

scrambled eggs with scallions, soy–ginger butter, mushrooms, and toasted sesame. Served with scallion pancakes and avocado.

NIKKEI OMELETTE

A fluffy omelette with sautéed maitake mushrooms, feta, and tomatoes, finished with a light ponzu–huancaína drizzle. Served with crispy potatoes and choclo.
